POTATO, ROSEMARY, GARLIC & PARMESAN PIZZA

Serves 1-2 (Makes 1 pizza)

Ingredients:
1 large or 2 small-medium white washed potatoes
1 finely chopped fresh garlic clove
Olive oil
Sprig fresh Rosemary
1/4 cup grated parmesan
Pizza base

METHOD:
Preheat oven to 200°C
Rinse & peel potatoes. Carefully thinly slice (a mandolin is excellent for evenly slicing – please use with care because of the sharp blades). Thin slices are essential so that the potato cooks through.

Brush pizza base with olive oil & sprinkle with finely chopped fresh garlic

Scatter half of the parmesan over base

Arrange potato slices on top of parmesan

Sprinkle remainder of parmesan on top of potato slices

Sprinkle sparingly with fresh rosemary leaves

Cook in oven for approx 12 minutes or until base is crisp and potato slices are cooked through.
